Lengua Estofada - Ox Tongue



Lengua Estofada is usually served for fiesta or celebrations not only because it is bit costly rather i takes time to clean it thoroughly, to rid it of excess muscles and to tenderize it.

Ingredients:
  1. 2 1/2 lb. ox tongue
  2. 1/2 cup flour
  3. 1/2 cup olive oil
  4. 6 gloves garlic, crushed
  5. 2 medium onions, chopped
  6. 1 sm. can tomato sauce
  7. 1 tbsp. vinegar
  8. 1/2 cup white wine
  9. 1 bay leaf
  10. 2 tbsp. soy sauce
  11. 1 tbsp. brown sugar
  12. salt and pepper
  13. 1 cup whole mushrooms
  14. 1/2 cup pitted olives
Directions:

  1. Boil water and put ox tongue. Boil for 10 minutes.
  2. Scrape off the white stuff and rinse.
  3. Dip tongue in flour and brown in olive oil. Set aside.
  4. In the remaining oil, saute garlic, onions, and the rest of the ingredients except mushrooms and olives.
  5. Add tongue and simmer until tender. Slice tongue into individual portions.
  6. Thicken sauce with 2 tbsp. flour.
  7. Add the mushrooms and olives.
  8. Season with salt and pepper.
  9. Pour sauce over the sliced tongue.

Only now I know that lengua estofada is an ox tongue..never tasted this thing..anyway, I will try it..

Hello Jessie, thanks sa pagbisita sa kusina ko. Yung bulad is cebuano word nang tuyo or dried fish. Oi add ko tong kusina mo ha sa kusina ko thanks hehe.
